Spiced Gooseberry Chutney
Ingredients
- 5lbs gooseberries
- 4lbs sugar
- 18 fl oz cider vinegar
- 2 tbsp ground cinnamon
- 1 tbsp ground ginger
- 1 orange – grated rind and juice
Method
- Put all ingredients together in a stainless steel pan and allow them to infuse for several hours till the juices run. Overnight would do fine.
- Bring slowly to the boil stirring frequently with a wooden spoon.
- Cook on a gentle heat for about 2 hours, continuing to stir regularly to prevent burning.
- When thick, bottle in air tight screw topped jars – makes approximately 5 lbs of chutney.
