A 27 litre capacity stainless steel pasteuriser with digital display. Includes a plastic grid to sit bottles on and handy dispensing tap.

  • Fully adjustable digital thermostat and timer for accuracy and ease of use.
  • Powerful 1800W heater ensures the unit will reach operating temperature quickly and maintain it with ease.
  • We recommend pasteurising at 72 degrees for 20 minutes for apple juice or 64 degrees for 20 minutes for cider.
  • Can also function as a brewing kettle for making beer, for mulling wine and for storing and dispensing hot liquids at functions.

This product is compatible with our juice extractor top. This extends its function, allowing you to extract fruit juice from currants, berries, stoned fruits and hard fruits.

Why pasteurise?

Pasteurising makes a world of difference to the length of time you can store your juice or cider. Fresh apple juice will keep in the fridge for 2 to 3 days before it begins to ferment, but if pasteurised can be stored for anything up to 2 years. Any cider can be pasteurised as a "belt and braces" way of stopping further fermentation. This is essential for ciders that are naturally sweet or have had sugar added after fermentation. Pasteurised cider will keep for up to 12 months.

Pasteurising involves carefully heating the juice or cider to 75°C and holding at this temperature for 20 minutes. This is difficult to do using a hob and can result in juice with a cooked apple flavour or juice that is not properly pasteurised. Using our purpose-built digital pasteuriser with thermostat and timer makes pasteurising easy!

How to pasteurise juice/cider in the bottle using the Digital Pasteuriser:

  • Fill the bottles with juice/cider to the fill level embossed around the base of the bottle and expressed in mm. If the bottle does not have a fill level leave a gap at the top to allow for expansion of the juice when heated.
  • Loosely apply the screw caps
  • Place the filled bottles on top of the grid in the pasteuriser tank
  • Fill the tank with water to within an inch or two (25-50mm) of the top of the bottle
  • Place the lid on top of the pasteuriser
  • Set the desired temperature and timer on the pasteuriser
  • Press in the temperature knob to switch turn on the heater
  • When the set temperature is reached an alarm sounds and the timer starts
  • When the set time has elapsed the alarm sounds repeatedly
  • After pasteurisation is complete, remove the bottles, fully tighten the caps and lay each filled bottle on its side so that the hot juice/cider comes into full contact with the seal on the inside of the cap. Allow the juice/cider to cool in this position.

How to pasteurise juice/cider in the bag (of bag-in-box) using the Digital Pasteuriser:

  • Fill the bag, allowing some room for expansion of juice/cider during the heating process - filling is much easier using the Filling Support Frame with Tap Closing Tool
  • Push the tap on part-way with 2 clicks
  • Place 2 x 5 litre bags or 1 x 10 litre bagonto the pasteuriser grid (NB The 20 litre bag is not suitable for use in this pasteuriser as the tank capacity of the pasteuriser is insufficient)
  • Fill the tank with water to within an inch or two (25-50mm) of the top of the bag
  • Set the desired temperature and timer on the pasteuriser
  • Press in the temperature knob to switch turn on the heater
  • When the set temperature is reached an alarm sounds and the timer starts
  • When the set time has elapsed the alarm sounds repeatedly
  • After pasteurisation is complete, remove the bag/bags
  • Push the tap firmly home with 3 clicks
  • Allow the bag/bags to cool before putting them in the box

Bottling fruit & veg

Granny’s old rules for preserving have not changed over time! Preserving is simply sterilising food in special glass containers without using chemicals. Using our pasteuriser the even heat generated helps to kill germs and create a vacuum that cleverly seals your jars. For more information on bottling fruit see How to bottle fruit.

How to preserve fruit & vegetables using the Digital Pasteuriser:

  • Prepare the fruit & vegetables according to the recipe you are using and fill the preserving jars - a gap of 2cm below the rim is usually left
  • Place the rubber seal on each jar and close tightly with the spring clips, screw-on lids or braces supplied with the jar.
  • Place the filled jars on top of the grid in the pasteuriser tank
  • Fill the tank with water so that the jars are submerged 2/3 to 3/4 in water (if double stacked the upper jars must be 3/4 submerged)
  • Place the lid on the pasteuriser
  • Set the desired temperature and timer on the pasteuriser
  • Press in the temperature knob to switch turn on the heater
  • When the set temperature is reached an alarm sounds and the timer starts
  • When the set time has elapsed the alarm sounds repeatedly
  • After pasteurisation is complete, remove the jars and allow them to cool
